Breakfast is an important start to a vegetarian’s day. Eggs are a great source of protein, but they can be boring day after day. Here’s a way to make them interesting and healthier!

Start with three eggs. Crack those into a bowl and whisk them up until they look nice and yellow. Then take a handful of two (or three) chopped vegetables and throw them into that same bowl. (I used organic baby spinach and mushrooms; it was delicious!) Then scramble the egg and vegetable combination on a pan coated lightly with olive oil. When the eggs are cooked it’s time to put that yummy stuff on a plate!

To make it even tastier, you can add salsa or another sauce to the eggs and vegetables. My suggestion is fresh salsa or Hawaiian Barbecue Sauce. The Hawaiian Barbecue Sauce is made with pineapple and it really compliments the eggs and vegetables. It can be purchased at Trader Joe’s.

Then you roast everything for about 10 minutes on medium heat, stirring often. After that add another tablespoon of olive oil, and let simmer for another 5-10 minutes so the taste is just right. It’s easy, healthy, and most importantly, colorful, which will make you and your body happier.

It’s funny, but I don’t miss meat at all. It’s surprisingly easy to avoid so far.
Anyway, everyone should enjoy Julie’s Organic ice cream products. Here I’m displaying a Sorbet Bar made with real blackberries, and it’s a non-dairy product. Totally delicious, more importantly. Easy little vegetarian snack.

you should! they were delicious. also, i eat organic grass-fed eggs and organic raw milk from local farmers otherwise i might consider not eating either of those.

This was the first breakfast of my summer. My friend and I made tea, bagels, and crepes. Plenty of strawberries and bananas made it healthy. I don’t even miss bacon. Eating just fruit, carbs, and a little dairy (from Nutella) made this breakfast quite hearty without the meat.
To make the crepes I use this recipe, but instead of melting all the butter that it calls for, I simply melt just enough butter to cover the pan before pouring on the batter. Also, with this recipe you can put in any even number and it will show you the appropiate amount of ingredients, which helps make the right amount of crepes.

Tonight for the first time I had a meatless “Boca Burger”. They’re made out of non-gmo soy, which made my mom happy. I was apprehensive about the taste, but wow! It was delicious! The texture was better than real piece of meat because it wasn’t as tough and greasy. I used a little ketchup (the kind with no corn syrup) and it was perfect!
My favorite part was that it was so simple to make.
To prepare for yourself:
Buy Boca meatless burgers. (I got the “All-American” type but you can try whichever.)
Put olive oil on a pan, I used about two tablespoons and that was plenty.
Let cook until light brown. Flip it from side to side until both look healthily cooked.
Enjoy by itself, or with pickles, lettuce, cheese, or ketchup!
